Homemade Bertie Bott's Recipe | My Harry Potter Kitchen (Recipe #25)

"What she did have were Bertie Bott's Every Flavour Beans"

One of the most famous sweets in the Wizarding World is here and they really do come in every flavour so I had to think of a magical way to bring this recipe to life in all its glory!


This homemade Bertie Bott's Every Flavour Bean recipe will show you everything you need to do to create your own homemade chewy sweets. Once you've mastered the base you can then personalise the coating to create Every Flavour your heart desires! What would you go for?

Homemade Marmalade Ingredients:

(makes around 60 jelly beans)


For the beans

  • 100g granulated sugar

  • 1 tbsp glucose syrup

  • 1 tsp cornflour

  • 45ml water

For the sugar syrup

  • 200g sugar

  • 200ml water

Flavourings

  • chocolate

  • peppermint

  • marmalade

  • spinach

  • liver

  • tripe

  • sprouts

  • toast

  • coconut

  • beans

  • strawberry

  • curry

  • grass

  • coffee

  • sardines

  • pepper

To finish

  • extra caster sugar

  • beeswax (for the shiny coating)

Method:

  1. Add the sugar, glucose, cornflour and water into a saucepan and heat until it reaches the soft ball stage at 120c

  2. Remove from the heat and use a pipette to transfer the syrup into jelly bean moulds. Place into the fridge to set for a couple of hours

  3. While the jelly beans are setting you can make your sugar syrup by heating the sugar and water until all the sugar has dissolved.

  4. If you're using extracts add a few drops to 2-3 tablespoons of syrup along with some food colouring.

  5. If you're using fresh ingredients such as vegetables, cook the vegetables in water until infused, strain the liquid and use this to make a sugar syrup with equal parts sugar

  6. If using meat or fish, cook the ingredients through keeping the oil and juice that comes out while cooking. Time off a bit of the meat or fish, along with the oils and juices and add to the sugar syrup.

  7. To create the beans, remove the jelly beans from the mould and place 5 - 10 into a bowl and drizzle over a few drops of your flavoured syrup. Sprinkle over some more sugar and stir through until well coated. Repeat this process until it has built up a thick layer.

  8. For an extra shiny finish place the beans into a rock tumbler with 1 tbsp of sugar and some grated beeswax and then tumble the beans for 1 hour. Remove from the tumbler, sift off any excess sugar and then give them another tumble for 30-45 minutes.

  9. Continue the process with the rest of your beans and flavoured syrups
