As a self-confessed chocoholic, I'm always looking for ways to up my chocolate game, and it doesn't get much better than a chocolate lava cake - unless you add in some Hogwarts magic, of course!
This easy chocolate lava cake recipe only takes minutes to prepare and ensures that even beginners get the perfect gooey centre! Using coloured white chocolate ganache is a foolproof way to get a molten flowing centre - and allows you to incorporate hidden Hogwarts House colours for an edible Sorting Hat masterpiece!

Sorting Hat Chocolate Fondant Ingredients
(makes 4 puddings)
For the chocolate ganache centres:
100g white chocolate
100ml double cream
food colouring gel (red, green, blue, yellow)
For the Chocolate Fondant recipe:
100g golden caster sugar
1 tsp vanilla
100g plain flour
butter and cocoa (to line tins)
Hogwarts Lava Cake Method:
To begin, prepare the ganache by heating the cream until warm but not boiling. Chop the chocolate into smalls chunks and divide into 4 bowls.
Split the cream into 4 separate bowls and dye with food colouring, whisking through until evenly combined. Pour the hot cream over each of the chopped chocolate bowls and leave for 30 seconds to 1 minute.
Stir through until the chocolate has completely melted and you have a smooth sauce. Pour the ganache into sphere moulds or allow to cool in the fridge until set. (Wizard Tip! If you don't have a mould, use an ice-cube tray. Or set in the bowl and shape into balls once firm.)
To create the chocolate lava cake, chop the chocolate into chunks and place into a bowl over simmering water. Add in the butter and stir until melted and smooth. Remove from the heat and allow to cool slightly.
In a separate bowl, whisk the eggs and sugar together until light and frothy. Add in cooled chocolate and vanilla and fold through.
Sift flour over the top, add the salt in, and then fold in, being careful not to knock out too much air.
Grease your ramekins with butter and then coat with cocoa, tipping to remove any excess. Pour the batter in leaving an inch from the top.
Remove the chocolate ganache from the mould and roll in your palm into a ball. Press into the centre of the fondant mixture being careful not to let it touch the bottom. Cover the top with the chocolate lava cake mix to make sure the colour is fully hidden.
Bake at 200c for 12-15 minutes. Use an offset spatula to ease the fondant from the side of the mould, place a plate on top and flip over. Serve hot to reveal the molten chocolate Hogwarts House colour inside!
