Christmas Turkey Sandwich Recipe | My Harry Potter Kitchen (Recipe #59)

We're back in Chapter Twelve of the Philosopher's Stone - 'The Mirror of Erised' where we find

"After a tea of turkey sandwiches"

There is nothing greater than a Christmas Dinner that keeps on giving - thankfully this sandwich recipe is the best way to turn your leftovers into something special!

This Christmas Turkey Sandwich recipe is stacked high with all of your favourite things from a Christmas dinner. Serving it open top style allows you to appreciate all the fillings - on top of this homemade cranberry and walnut bread you'll find cranberry sauce, brie, stuffing and turkey!

Open Top Christmas Turkey Sandwich Recipe Ingredients:

(makes 1 medium loaf, plus ingredients per sandwich)

For the cranberry and walnut bread recipe

  • 500g wholemeal bread flour

  • 2 tsp salt

  • 2 tsp yeast

  • ⅛ tsp cinnamon

  • 300ml water

  • 1 tbsp olive oil

  • 60g walnuts

  • 75g cranberries

For the cranberry sauce

  • 50g muscovado sugar

  • juice of 1 orange

  • 250g fresh cranberries

To top

  • brie

  • stuffing (and some vegetable stock)

  • turkey

Open Top Turkey Sandwich Recipe Method:

  1. To make the cranberry and walnut bread place the flour into a bowl with the cinnamon and then make a well in the middle. Place the salt and yeast on either side and pour the water and olive oil into the middle. Knead until the dough comes together into a soft ball

  2. Chop the walnuts into small pieces and then add into the dough - continue to knead for another 5 minutes. Transfer the dough into a greased bowl, cover in cling film and then place in a warm place for an hour until doubled in size.

  3. Knock back the air of the dough by kneading for 1 minute before shaping. I've gone for a circle loaf which I've then placed onto a tray before carving a lightning bolt on top. Loosely cover with cling film and leave to rise for another hour.

  4. Dust with a little extra flour before baking at 180c for 40 minutes (Wizard Tip! You'll know it's ready when the base of the break sounds hollow when tapped)

  5. To make the cranberry sauce heat a pan on a medium heat and add in the cranberries, sugar and orange juice. Bring to a rapid boil for 5 minutes. Break down the cranberries and when it's thick enough to coat the back of a spoon remove from the heat and transfer into a bowl.

  6. To prepare the stuffing, crumble your leftover stuffing into a bowl and slowly pour over some hot vegetable stock mixing through until you have a smooth consistency.

  7. You can also slice the turkey and brie so it's ready to assemble.

  8. Thickly slice the bread and then butter before spooning over some cranberry sauce. Layer over the slices of brie and then spoon the stuffing over that before spreading down. Finish with a layer of turkey before seasoning with salt and pepper and garnishing with fresh cranberries.

Now that's what I call a sandwich!
