This week, we're getting ready for the journey back to Hogwarts with an epic train snack!

We're back into Chapter Five of the Prisoner of Azkaban "The Dementor" for our next recipe:

"I've made you all sandwiches. Here you are Ron, no they're not corned beef"

Come on now Ron - Corned Beef isn't that bad!

After our original Corned Beef Sandwich back in the Philosopher's Stone I wanted to create a new Deli-Style Corned Beef Sandwich that even Ron wouldn't be able to resist!


This easy Deli Corned Beef Sandwich is stacked high with homemade sourdough bread, corned beef, and a whole host of juicy toppings - matching the colours of the Hogwarts Houses! Looking for an epic Harry Potter lunch that will last a train journey back to Hogwarts? You've come to the right place.

Ron's Corned Beef Sandwiches Ingredients

(makes 4-6 large sandwiches)


For the homemade sourdough bread recipe:

  • 100g sourdough starter

  • 500g strong white bread flour

  • 375ml water

  • 10g salt

For the Corned Beef sandwiches:

  • butter to spread

  • 2-3 tbsp mustard

  • 1 tin corned beef

  • 2-3 pickles

  • 8 slices of cheese

  • 1 iceberg gem lettuce

  • 2 tomatoes

  • 1 red onion

Corned Beef Sourdough Sandwich Method:

  1. To create your sourdough bread, begin by preparing the starter. Mix 100g of the starter with 200g flour and 200ml water until it forms a smooth paste. Cover with clingfilm or a towel and leave for 8-10 hours. (Wizard Tip! Don't have a starter? Mix the flour and water with one packet of dry yeast and leave in the fridge overnight)

  2. Two hours before the starter is ready, combine the remaining 300g flour with the salt and 175ml water. Mix into a dry dough (don't worry if it's not fully incorporated - the flour will absorb the moisture). Cover with a towel and leave to rest.

  3. After the final two hours, add the starter to the dough and work with your hands until smooth. (Wizard Tip! It will look lumpy at first but keep going until it evens out!)

  4. Allow the dough to rest for 30 minutes and then perform a stretch and fold. Dip your hand in cold water, grab the end of one edge of the dough, stretch up and fold over the other side. Repeat 4 times (one at each corner) and then leave the dough to rest for another 30 minutes. Keep doing this 4 times in total. (Wizard Tip! Check out the video recipe to see the technique in action)

  5. After the final stretch-and-fold, prepare a bowl and cloth with a generous amount of flour. Shape the dough into a smooth ball and add in. Cover with cling film and chill in the fridge overnight.

  6. Pre-heat the oven to 220c (450F) with a dutch oven or baking tray inside. Once hot, flip the chilled dough into the pot/tray, score the top and then cover with a lid (if using). Bake for 25 minutes.

  7. Remove the lid (if using) and bake for a further 20 minutes until golden. Allow the bread to cool in the dish before removing.

  8. Prepare your Hogwarts House fillings by thinly slicing the red onion, shredding the lettuce and then slicing the tomatoes and pickles. Remove the corned beef from the tin and slice.

  9. Slice the sourdough bread and butter the sides. Stack the sandwich to suit your tastes (Wizard Tip! Use skewers to help with stability if the sandwich is leaning.

  10. Slice through and serve immediately

Now that is an epic homemade sandwich that even Ron wouldn't be able to resist!
