This week, we're showing a little Hogwarts House Pride with this irresistible fruitcake!
Let's jump back in to Chapter Two of the Prisoner of Azkaban "Aunt Marge's Big Mistake" for another Harry Potter recipe:

Better boil the kettle - another tea flavoured recipe is coming right up!
Fruit cake is back but this time we're going to focus on the fruit based decorations and come up with a tea flavoured sponge cake to complement them!
This easy earl grey cake is made with a light and fluffy sponge made with lemon zest and poppy seeds to complement the delicate tea flavours. It's a super simple homemade teacake recipe topped with an easy Swiss meringue buttercream frosting and a selection of Hogwarts House coloured fruits!

Aunt Petunia's Earl Grey Tea Cake Recipe Ingredients
(serves 8 - 12 )
For the earl grey cake recipe
1 tbsp loose leaf early grey (or two tea bags)
175g golden caster sugar
200g self-raising flour
zest of a lemon
¼ tsp mixed spice
½ tsp vanilla
½ tsp almond
1 tbsp poppy seeds
For the Swiss meringue buttercream icing recipe
100g caster sugar
50g egg white
1 tsp vanilla
pinch of salt
(optional) 1 tsp earl grey milk
Homemade Earl Grey Fruit Cake Recipe Method:
To begin, create and earl grey milk infusion by heating the milk and earl grey tea until hot but not boiling. Stir well and leave to cool and infuse for 10 minutes.
Cream the butter and sugar together in a bowl until light and fluffy, scraping down the sides halfway through
Crack the eggs into a jug, lightly whisk until combined and then slowly add into the butter and sugar mix until fully incorporated.
Flavour with mixed spice, vanilla extract, almond extract, lemon zest and poppy seeds, then mix again.
Add in the flour and cooled earl grey milk and then slowly mix until combined, being careful not to overwork
Grease and line a loaf tin before pouring in the cake mix. Level off and bake in the oven at 180c (360F) for 30 minutes until a skewer comes out clean
While the cake cools you can make the Swiss meringue buttercream recipe by separating the egg whites and adding into a bowl over simmering. Pour in the sugar and whisk continuously for about 10 minutes until the mixture reaches 65c
Pour the syrup into a bowl and whisk on high for 7-10 minutes until the meringue is thick and glossy. (Wizard Tip! Touch the side of the bowl and it should be cool).
Slowly add in the softened butter a spoonful at a time, whisking well before each addition. (Wizard Tip! You can also flavour this with extra earl grey milk!) Add in the vanilla and a pinch of salt before whisking for a final 2 minutes
Transfer the cooled cake onto a servicing dish with the bottom facing up, and pipe the Swiss meringue buttercream on top.
Slice the Hogwarts House inspired fruits and decorate on top before serving
