"A moment later the puddings appeared... jam doughnuts"
Everybody loves doughnuts so it was a fun challenge to make a batch worthy of the Hogwarts Feast but I think we got there!
This homemade jam doughnut recipe is made using my easy doughnut dough recipe which is sure to give you a crisp outer shell and a fluffy middle! We're cutting these into lightning bolt shapes and filling them with homemade jam for an extra touch of magical sweetness!
Homemade Jam Doughnut Recipe Ingredients:
(makes 6 large doughnuts)
For the doughnut dough
250g plain flour
250g strong white bread flour
100g golden caster sugar
1 tsp salt
7g fast-action dried yeast
50g melted butter
1 tsp vanilla
For the homemade raspberry jam
150g fresh raspberries
150g jam sugar
juice 1/2 lemon
oil for frying
sugar for dusting
Harry Potter Doughnut Recipe Method:
To begin, prepare the doughnut dough by combining the dry ingredients in a bowl. That's the plain flour, strong white bread flour and caster sugar. Mix together and then make a well in the middle sprinkle the salt on one side and the yeast on the other.
Pour the milk, melted butter, eggs and vanilla in the middle and work together until it forms a soft dough. (Wizard Tip! This will take about 5 minutes using a stand mixer or 10 minutes by hand).
Once smooth, transfer to a greased bowl, cover with cling film and leave in a warm place to rise for an hour until it's doubled in size.
Place a saucepan on a medium heat and add in the raspberries, jam sugar and lemon juice. Boil for 5 minutes until the fruit has softened and then break down the raspberries. Continue to cook for 5 more minutes until thickened. (Wizard Tip! You'll know it's ready when it coats the back of a spoon). For a smoother jam, pass this through a sieve to catch the pips before sealing in your airtight jar.
Once the dough is ready, knock back the air slightly and knead on a lightly floured surface for 1 minute. Roll out to 1 cm thick and then use a stencil to cut out your lightning bolts. Loosely cover with cling film and allow to rise for another hour.
10 minutes before the doughnuts are ready begin heating your oil. (Wizard Tip! You can test the heat using a scrap of dough and it should go golden in 1 minute).
Fry the doughnuts for 1-2 minutes on each side, flipping and allowing the other side to cook. Remove from the oil, dry on a paper towel and then continue cooking the rest of your doughnuts.
Pour the jam into a piping bag with a sharp tip and use it to pierce each doughnut before filling with jam. To finish, coat the outside of each doughnut in the remaining sugar.
These magical lightning bolt doughnuts won't be around for long!
