We've mastered jam, and now it's time for a little butter!
Butter has so many uses, both sweet and savoury, and is often a kitchen ingredient we take for granted. But have you ever wondered how to make butter at home? It's actually really easy!
This week I'm going to show you how to make butter from scratch - but we're going to take our homemade butter recipe to the next level by flavouring them in four Hogwarts House varieties! We've got Ravenclaw Caramalised Onion Butter, Slytherin Garlic Butter, Gryffindor Peri Sun-dried Tomato Butter and Hufflepuff Honey Mustard Butter! Which one would you choose?

Homemade Butter Recipe Ingredients
(makes four 150-200g blocks)
For the homemade unsalted butter recipe
1200ml double cream
(Yup - that's it! You’ll yield about half the weight in butter)
For the Ravenclaw Caramalised Onion Butter recipe
1/2 tsp salt flakes
1/2 red onion
oil for frying
For the Slytherin Garlic Butter recipe
1/2 tsp salt flakes
3 cloves garlic
a handful of flat-leaf parsley
For the Gryffindor Peri Sun-dried Tomato Butter recipe
1/2 tsp salt
1/2 tsp peri-peri flakes
2-3 sun-dried tomatoes
For the Hufflepuff Honey Mustard Butter recipe
1/2 tsp salt
1/2 tsp honey
1/2 tsp mustard
You want to prepare your ingredients first to give them enough time to cool and dry. For the Ravenclaw butter, place a pan on a medium heat, add in your oil and leave to warm. Slice your onion into strips and then add into the hot oil. Keep moving allowing the onions to caramalise for 3-5 minutes. Add in more oil if the onions begin to catch. Once you're happy with the colour, drain on a paper towel.
For the Slytherin garlic butter, remove the parsley from the stems and finely chop. Peel the garlic and press through a garlic crusher.
For the Gryffindor butter, remove the tomatoes from the oil and cut into small chunks. Press between two pieces of paper towel to remove the excess oil.
Our Hufflepuff butter doesn't need any additional prep!
To make your unsalted butter base, pour the double cream into a bowl and whisk on a medium-high speed for 5-10 minutes. As you whisk the mixture will begin to thicken, then split. Keep on whisking and the fat solids will separate from the liquids. (Wizard Tip! Don't throw the liquid away - this is buttermilk which can be used in other recipes!)
Remove the solids from the bowl and strain off in a sieve. Place into muslin cloth and squeeze to remove any excess buttermilk. (Wizard Tip! Place the muslin cloth into ice-cold water and the buttermilk will disperse, squeeze out and repeat until the water stays clear and you'll know there's no buttermilk left) Keep on going until no more liquid comes out!
You can use the butter unsalted or flavour it with salt, or your Hogwarts House inspirations!
Separate the butter into four and add in the flavourings; salt and the caramalised onions for Ravenclaw, salt, garlic and parsley for Slytherin, salt, peri flakes and the tomatoes for Gryffindor, and salt, honey and mustard for Hufflepuff. Mix the flavours through until well combined.
Using butter paddles (or spatulas) shape your butter into blocks. Smooth over and chill in the fridge to firm up for 30 minutes. You can serve as they are - or cut into Lightning Bolts!
Once you discover how easy butter is to make you'll want to make it again and again! So next time you're making a dessert and accidentally over-whip your cream - why not turn it into butter!
