Hagrid's Homemade Sausage Recipe | My Harry Potter Kitchen (Recipe #17)

If you've ever been of a British campaign trip then you'll know that breakfast means sausages cooked over a campfire - so that's what we're serving up today!

This easy homemade sausage recipe is the perfect way to create a breakfast treat that is personalised to your taste. Once you've mastered how to make sausages at home, you can tweak the meat, spices - and even shape to make them truly magical! I'll also show you how to make sausages without a sausage maker (but if you have one you can skip the piping bag steps)

Homemade Sausage Recipe Ingredients:

(makes 6-8 sausages)

  • 500g pork mince

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp oregano

  • ½ tsp chilli flakes

  • 1 tsp thyme

  • ½ tsp nutmeg

  • 1 tsp white wine vinegar

  • 1 tsp Worcestershire sauce

  • rusk or breadcrumbs (optional)

  • sausage skins

  • oil for frying

Homemade Sausage Recipe Method:

  1. To make the easy sausage meat recipe you want to begin by placing the pork into a bowl and seasoning with your spices of choice. I've gone for salt, pepper, oregano, chilli, thyme and nutmeg - but feel free to personalise it to your tastebuds!

  2. Add the white wine vinegar and Worcestershire sauce for flavour and moisture. If you prefer your sausages less firm you can also add in some rusk or breadcrumbs at this point.

  3. Work the seasoning into the meat binding it together until smooth but being careful not to over-work the mixture.

  4. If you don't have a sausage maker, place the meat into a piping bag with a wide round opening. Tie one end of the sausage skins and then place on the end of the piping bag. Gently squeeze out the sausage meat while easing the skins off the end of the nozzle.

  5. Once all the sausage meet has been piped leave a small 1-inch gap and then tie the other end.

  6. Twist the sausage link at regular intervals until tight to create your individual sausages and leave to rest.

  7. Once ready to cook you can cut the sausages to separate them. Heat some oil in frying pan and add in your sausages. Allow to cook for 3-5 minutes on each side turning as you go.

  8. When golden brown the sausages will be ready (Wizard Tip! The juices should run clear when you pierce the centre of a sausage). Serve immediately (on skewers for an extra Hagrid effect)
