Hogwarts Liver Pate Recipe | My Harry Potter Kitchen III (Recipe 17)

This week we're moving onto Chapter Four of the Prisoner of Azkaban "The Leaky Cauldron" where we find our next recipe:

Your next Harry Potter dinner party is about to get a whole lot fancier!

Don't worry we won't actually be serving raw liver this week - but the closest thing I could think of was liver pate so I decided to give the classic appetiser a little Hogwarts magic twist!

This easy liver pate recipe can be prepared in minutes and personalised to suit your tastes (or Hogwarts House!) I've infused the traditional butter toppings (typically used to preserve the pate) with Hogwarts House inspired flavours to add an extra dose of magic!

I've used lamb liver, but if you prefer chicken liver pate, or even duck liver pate then you can easily substitute them with the same quantity

Harry Potter Hogwarts Liver Pate Recipe Ingredients

(makes 4 large servings)

For the liver pate recipe:

  • 400g liver (I used lamb but chicken, pork or duck work well too!)

  • 1 clove garlic

  • 1 shallot

  • 2 sprigs rosemary

  • 2-3 sprigs thyme

  • pinch salt and pepper

  • 50ml sherry

  • 200g unsalted butter

For the Hogwarts House butter toppings:

  • Smoked paprika and chilli butter for Gryffindor

  • 50g unsalted butter

  • 1 tsp paprika

  • ½ red chilli

  • Garlic butter for Hufflepuff

  • 50g unsalted butter

  • 1 cloves garlic

  • sprig of rosemary

  • Chimichurri butter for Slytherin

  • 50g unsalted butter

  • 1 clove garlic

  • ½ red chilli

  • generous handful chopped parsley

  • 1 tsp red wine vinegar

  • Olive butter for Ravenclaw

  • 50g unsalted butter

  • 25g kalamata olives

  • 1 clove garlic

Hogwarts House Liver Pate Recipe Method:

  1. To begin, peel and finely slice the shallots, peel and crush the garlic, and then finely chop the rosemary and thyme.

  2. Place a pan on a medium heat, drizzle in some olive oil and then fry the shallots for 1-2 minutes. Add the garlic, rosemary and thyme, and cook for a further minute.

  3. Season the base with salt and pepper and then add in the livers. Cook for 2-3 minutes on each side before flipping over.

  4. Pour in the sherry. It should bubble immediately so stir through and allow to simmer for 1-2 minutes.

  5. Once cooked, transfer the livers and base to a food processor and blend until smooth. Add the room temperature butter in a spoonful at a time, blending between each addition.

  6. To achieve a smooth pate, press through a sieve to remove any grains.

  7. Pour the pate into 4 servings glasses or jars and place in the fridge.

  8. To make the preserving butter topping, melt the butters in separate bowls.

  9. For Gryffindor, de-seed and chop the chillis and add into a blender with the butter and paprika. Blend until smooth

  10. For Slytherin, place the butter, garlic, de-seeded chilli, parsley and red wine vinegar into a blender and blitz into a sauce.

  11. For Hufflepuff, press the garlic with the back of a knife and add it into the butter along with the rosemary. Simmer for a few minutes and then leave to infuse

  12. For Ravenclaw, place the butter, olives and garlic into a blender and blitz until smooth.

  13. The butter toppings can be used as they are, but you can also strain/remove the infusions if you prefer.

  14. Pour the Hogwarts House butters over the pate and return to the fridge for 4 hours until they have set completely. Serve with warm bread, sliced baguettes or croutons.
