We're heading back into Chapter Four - 'At Flourish and Blotts' for our next Harry Potter recipe:

Looks like it's time for another ice-cream based dessert!
As soon as I saw peanut butter and strawberry ice cream I immediately thought of Peanut Butter Jelly sandwiches so thought it was the perfect opportunity for another food illusion dessert!
This week I'll show you how to make peanut butter and strawberry ice cream at home using my easy three-ingredient ice cream recipe. We'll then be transforming the ice-cream into a PBJ sandwich, layering it up with peanut butter ice cream and a simple strawberry syrup for ice cream!

Peanut Butter Jelly Ice Cream Recipe Ingredients
For the three-ingredient ice cream recipe
500ml double cream
1 can (400g) condensed milk
1 tsp vanilla extract
For the peanut butter ice cream recipe
2 tbsp peanut butter
½ tsp cocoa powder
For the strawberry ice-cream sauce recipe
For the ice-cream sandwich decorations
PBJ Ice Cream Sandwich Method:
To begin you want to make your quick three-ingredient ice cream recipe by whisking your double cream in a bowl until it forms soft peaks. Add in your condensed milk and vanilla and then continue whisking until it forms stiff peaks.
Double line a rectangle baking tin with cling film and then pour ¾ of your mixture in. Level off with a spatula and then place in the freezer.
For the homemade peanut butter ice-cream, mix your peanut butter and cocoa powder in a bowl until loose. Add in ⅓ of the remaining ice-cream mixture and stir through to loosen the mixture even more. Add the next ⅓ ice-cream mix in and fold carefully so you don't over whip. Repeat with the last of the ice-cream mixture and then pour the peanut butter ice-cream mix into a Tupperware box. Place a lid on top and freeze, along with the vanilla ice-cream for at least 4 hours (preferably overnight)
For the strawberry sauce, wash and prepare your strawberries by removing the stems. Place the strawberries in a pan on a medium heat and add in your sugar and lemon juice. Stir until evenly coated and bring to the boil. It should take around 5 minutes to reach 100c (Wizard Tip! You'll know it's ready when the syrup coats the back of a spoon and leaves a trail when you run your finger across it). Place the sauce aside to cool and seal in an air-tight container - it should last for up to a month in the fridge.
Before assembling your ice-cream sandwich finely chop the hazelnuts and then spread onto a baking tin. Remove your vanilla ice-cream from the freezer and cut the rectangle into two squares. Slice each square diagonally to get your sandwich triangles. Use a blow torch to melt the edges and then dip into the hazelnuts leaving the diagonal edge plain. Once all your triangles are coated place back into the freezer.
Remove the peanut butter ice-cream from the freezer and allow to soften before using a mixer to whisk until light and fluffy.
To assemble your ice-cream sandwich, spread the strawberry sauce over two of the triangles, and then generously apply the peanut butter ice-cream over the remaining two. Sandwich these together and serve immediately!
