Looks like it's time for another cake recipe from the domestic goddess, Molly Weasley!

Christmas is in the air and our first festive treat comes from Mrs. Weasley with another food parcel for Harry! Plums are an incredible versatile fruit - so while you're planning what desserts to serve at Christmas dinner I wanted to share a great Christmas cake alternative - Spiced Plum Cake!

This Spiced Plum Cake is incredible easy to make and is the perfect Christmas tea cake for those who aren't a fan of traditional Christmas Cake. The lightly spiced sponge, packed full with fresh plums, perfectly compliments the ginger crumble cake topping that adds both flavour and texture. And of course, it wouldn't be My Harry Potter Kitchen without a lightning bolt plum decoration on top!

Harry Potter Spiced Plum Cake Recipe Ingredients

(makes one cake, approx. 12 servings)

For the spiced plum cake recipe

  • 170g (6oz) butter

  • 170g (6oz) golden caster sugar

  • 3 eggs

  • 170g (6oz) self-raising flour

  • 1 tsp vanilla extract

  • 1/4 tsp mixed spice

  • 1/4 tsp cinnamon

  • 3 plums (ripe)

  • 2 tbsp self-raising flour

For the ginger crumble cake recipe

  • 100g plain flour

  • 50g butter

  • 50g golden caster sugar

  • 1/2 tsp ground ginger

To decorate

  • 1 plum

  • 2 tbsp golden syrup

Easy Spiced Plum Cake Recipe Method:

  1. To make the spice plum cake batter you want to begin by creaming together the butter and sugar until light and fluffy.

  2. Crack the eggs into a jug, lightly whisking them until even and then slowly pour into the butter and sugar while mixing on a slow speed. (Wizard Tip! If the mixture begins to split or curdle, add a tbsp of flour to bring it together)

  3. Add in the flour, vanilla, mixed spice and cinnamon and then continue mixing on a slow speed until just combined. (Wizard Tip! Be careful not to over-mix - otherwise you'll end up with a dense sponge cake).

  4. Slice the plums in half, remove the seeds and then cut into small chunks (approx 1cm cubes). Toss the plums in the remaining flour to prevent them sinking and then fold into the cake batter.

  5. Grease and line a 7" baking tin and then pour in the cake mixture before levelling off with a spatula.

  6. To make the easy ginger crumble cake topping place the flour into a bowl with the butter and then work with your fingertips until it forms chunky breadcrumbs. Add in the sugar and ginger and then stir until evenly combined. Generously sprinkle the crumble over the cake.

  7. For the optional decoration, slice and remove the seed from the remaining plum and slice into thin strips. Place these on top of the crumble into your desired shape or initial (Wizard Tip! Check out the video for some tips and tricks here).

  8. Glaze the fruit with some golden syrup and then bake the plum cake in the oven at 180c (350F) for 30-40 minutes. (Wizard Tip! You'll know it's ready when the crumble is golden and a skewer comes out clean when inserted into the middle)

  9. As soon as the cake is out of the oven, glaze the fruit again with the remaining golden syrup and then allow to cool in the tin for 10 minutes before removing. Serve hot or cold with your favourite accompaniment.
