Lightning Bolt Cheesy Pull-Apart Bread Recipe | My Harry Potter Kitchen II (Recipe #9)

This week we're serving up a magical twist on a classic snack!

This week's recipe is another from Chapter One of the Chamber of Secrets - 'The Worst Birthday':

Looks like Harry has drawn the short straw so let's see if we can cheer him up by turning bread and cheese into something a little more special

Bread and cheese is an absolute classic - and was definitely the centre of quite a few of my school packed lunches, so I was incredibly excited to see how we could add a little Wizarding World magic to such a 'Muggle' meal!

Whether you're having it as a side for soup, or just on its own, pull-apart bread is perfect to share and can be personalised in so many different ways to suit your tastes. For our Lightning Bolt Cheesy Pull-Apart Bread recipe, I'm stuffing the individual rolls with mozzarella and finishing the entire load with extra parmesan for good measure!

The smell of freshly baked bread is pretty irresistible, so coupled with cheese - this easy bread recipe is a certain winner!

Cheesy Pull-Apart Bread Ingredients

(makes 13 rolls)

for the easy bread rolls

  • 500g strong white bread flour

  • 1 tbsp salt

  • 1 packet fast-action dried yeast

  • 300ml warm water

  • 3 tbsp olive oil

for the fillings and garnish

  • 13 mozzarella pearls

  • 50g melted butter

  • 25g grated parmesan

  • 1 tsp parsley


  1. To create your simple bread recipe add the flour into a bowl and make a well in the middle. Sprinkle your salt on one side of the bowl and the yeast on the other.

  2. Pour the water and oil into the middle of the well and knead together until nice and smooth - this will take around 5 minutes in a stand mixer with a dough hook or 10 minutes by hand (Wizard tip! You'll know it's done when there's no residue on the sides of the bowl and the surface of the dough should be smooth and not sticky to touch).

  3. Place the dough into a lightly greased bowl, cover with cling film and allow to rise in a warm dry place for an hour until doubled in size

  4. One the dough is ready, knock back the air slightly by kneading for one minute and then cut into 13 pieces. Knead the dough balls in your hand and then flatten down.

  5. Place a mozzarella pearl into the centre of each dough ball and then knead in the palm of your hand to seal it in place.

  6. Lightly grease a baking tray and assemble your dough balls into your lightning bolt shape. Make the shape as tight as possible (Wizard Tip! Press down each ball to compensate for the rise and help it maintain its shape). Cover with cling film and allow to rise again for 45 minutes

  7. Melt your butter and then gently brush the top of each roll before baking in the oven at 180c (350F) for 25-30 minutes

  8. Once the loaf is lovely and golden brown, brush with some more melted butter and finish with grated parmesan and parsley. Transfer to a board and serve warm
