It's almost pumpkin spice season so let's grab a slice!

Pumpkin Tart is an incredibly popular autumn dessert, and as the feedback for my Lemon Meringue Snitches was so great - I decided to help these tarts fly with a little Golden Snitch treatment too!

This easy pumpkin tart recipe is quick to make with homemade sweet shortcrust pastry, and a sweet spiced pumpkin pie filling. With a quick trick, I'll show you how to transform your pastry shell into magical golden snitches!

Golden Snitch Pumpkin Tart Ingredients

(makes 8-10 servings)

For the sweet shortcrust pastry base recipe:

  • 250g plain flour

  • 125g unsalted butter

  • 100g icing sugar

  • 2 egg yolks

  • 2 tbsp water

  • pinch of salt

  • ¼ tsp ground nutmeg

  • ¼ tsp ground mixed spice

  • ¼ tsp ground ginger

For the pumpkin pie filling:

  • 450g pumpkin puree

  • 150g golden caster sugar

  • 300g condensed milk

  • 2 eggs

  • pinch of salt

  • ¼ tsp ground nutmeg

  • ¼ tsp ground ginger

  • ¼ tsp ground mixed spice

  • ¼ tsp ground cinnamon

  • ¼ tsp vanilla extract

Golden Snitch Pumpkin Tart Method:

  1. To make the sweet shortcrust pastry, rub the flour and butter until it resembles breadcrumbs and then stir through the icing sugar, nutmeg, salt, ginger and mixed spice.

  2. Make a well in the middle and add in the egg yolks and water. Stir through with a knife until the mixture comes together. Bring together with your hands into a small dough ball. (Wizard Tip! Be careful not to overwork the dough - chill in the fridge if it's too warm/soft)

  3. Lightly flour your surface and roll out to about ½ cm thick. Line a larger 20cm tart tin (or 6 individual tart cases). Clean the edges with a knife and then put them into the freezer for 1 hour (Wizard Tip! This will help prevent the tart shell from rising!)

  4. Re-roll the remaining pastry and then use a stencil to cut out the snitch wings. Transfer onto a baking tray and use a thinly rolled sausage of pastry to outline the top. Score down the wings with a knife to add texture

  5. Pre-heat the oven to 180c (350F) and bake the tart shells for 10 minutes.

  6. Mix the pumpkin puree, sugar and condensed milk in a bowl until smooth. Lightly beat the eggs before adding them in along with the salt, nutmeg, ginger, mixed spice, cinnamon, and vanilla. Stir through until well incorporated.

  7. Pour the pumpkin pie filling into the tart shell and then bake for 25 minutes. Lightly whisk the egg whites and glaze the snitch wings before pressing onto the top of the tart. Bake for a final 20-25 minutes until golden.

  8. Allow the Pumpkin Tart to cool for at least 5 minutes before slicing.

And with that, our Golden Snitch Pumpkin Pie is ready to fly!
