"He had never seen so many things he liked to eat on one table... pork chops"

Hungry for more treats from The Feast? Today we've got another meaty main as I serve up a delicious Pork Chop recipe!

This Slow Cooker BBQ Pork Chop Recipe is wonderfully simple to make so you can prep it in the morning, leave the slow cooker to work its magic and return to a melt-in-the-mouth dinner later that day! I'm serving this one up with a homemade BBQ sauce recipe using all the juices from the pork chops too!

Slow Cooker BBQ Pork Chop Recipe Ingredients:

(serves 3-4)

  • 4 thick cut pork chops

  • 2 tbsp olive oil

  • 1 tbsp brown sugar

  • 1 tsp of salt, pepper, garlic granules, oregano, paprika, mixed spice and cinnamon

For the BBQ sauce recipe

  • 2 tbsp olive oil

  • 1 red onion

  • 50g brown sugar

  • 50ml pineapple juice

  • 1 tbsp treacle

  • 500g tomato passata

  • 2 tbsp tomato puree

  • 1 tbsp red wine vinegar

  • ½ tbsp Worcestershire sauce

  • 1 tsp salt, pepper, garlic powder, paprike, chilli powder, cajun spice

  • ½ cup water for the slow cooker

Slow Cooker BBQ Pork Chop Method:

  1. To begin, make a quick marinade by combining the olive oil, sugar and dried herbs and spices into a bowl, stirring until well-combined.

  2. Generously coat the pork chops into the marinade and then place into a dish. Cover with clingfilm and then chill in the fridge overnight (or for at least 4 hours).

  3. For the BBQ sauce, peel and grate the red onion. Drizzle some olive oil into a saucepan and then add in the onions cooking for 1 minute. Add in the sugar and then allow to bubble away for 2-3 minutes until caramelised.

  4. Pour in the pineapple juice and treacle and continue to bubble for 1-2 minutes. (Wizard Tip! The longer you leave the base to caramelise for the darker and more intense your sauce will be - just be careful not to burn it!)

  5. Pour the remaining ingredients in - the tomato pasta, puree, red wine vinegar, Worcestershire sauce and dried herbs and spices and then stir through. Allow to simmer on a low heat for 15-20 minutes. Remove from the heat, and allow to cool slightly before transferring into an airtight jar. (This sauce works best if left in the fridge overnight so the flavours continue to mature)

  6. Remove the pork chops from the fridge and allow them to come to room temperature. Place a frying pan on a medium-high heat, drizzle in some olive oil and sear the pork chops for 1 minute on each side.

  7. Pour the BBQ sauce into the bottom of a slow cooker with ½ cup water and any left over juices from your frying pan. Stir through and add in the pork chops. Slow cook on a low heat for 4-6 hours until tender (the bone will be able to slide out easily once it's ready)

  8. Remove the pork from the slow cooker and then check the consistency of the BBQ sauce. If you prefer a thicker sauce you can make a quick mix from cornflour and water and stir it through the sauce until it thickens.

Even if you're not usually a fan of pork I'd definitely recommend giving this melt-in-the-mouth slow cooked version a try!
