Human friendly dog biscuits are back on the menu!

Last year's dog bone biscuits were a hit so this time round I wanted to create our edible dog biscuits with a nod to the most famous dog from the Prisoner of Azkaban - Sirius Black's Grim!

This easy chocolate biscuit recipe is inspired by the British classic - homemade bourbon biscuits! Two delicious layers of homemade chocolate biscuits sandwiched together with a rich dark chocolate buttercream. For a magical touch I've shaped them into "The Grim" but you can serve them up in the traditional rectangle shapes too!

Harry Potter The Grim Bourbon Biscuit Recipe Ingredients

(makes 9 - 12 (double layer) biscuits)

For the bourbon biscuit dough recipe

  • 150g butter

  • 150g light soft brown sugar

  • 1 egg

  • 1 tsp vanilla

  • 250g plain flour

  • pinch salt

  • 50g cocoa powder

  • 1 tsp baking powder

For the bourbon biscuit filling recipe

  • 150g butter

  • 275g icing sugar

  • 25g cocoa

  • 1 tbsp milk

The Grim Homemade Bourbon Biscuit Method:

  1. To begin, make the chocolate cookie dough by creaming together the butter and sugar until light and fluffy. Scrape down the sides and then add in the egg and vanilla. Beat together until smooth.

  2. Add in your dry ingredients - flour, salt, cocoa and baking powder, and then mix slowly until it forms a soft dough. (Wizard Tip! Be careful not to overmix the dough, otherwise your cookies will be tough!)

  3. Wrap the soft dough in clingfilm and chill in the fridge for 30 minutes (during this time you can make your rectangle or The Grim shape stencils)

  4. Lightly flour your worktop and roll out dough to 1/2 cm thick before cutting out The Grim shapes. Once half the dough has been used, flip the stencil over and cut the remaining cookies out in the opposite direction. Transfer onto a tray and chill in the fridge for 1-2 hours

  5. Preheat the oven to 180c (360F) and then bake for 10 minutes. Allow to cool completely on tray before transferring onto a wire rack.

  6. While the biscuits are cooling you can prepare your easy buttercream icing by whisking the butter until smooth. Gradually add in the icing sugar a spoonful at a time, whisking throughout. Once all the icing sugar has been combined add in the cocoa and milk, and whisk for another 1-2 minutes.

  7. Find pairs of evenly sized biscuits and flip over so the flat size is facing up. Pipe (or spread) a thick layer of buttercream icing on top of one side and then sandwich the other biscuit on top. Continue with the remaining biscuits.

  8. Keep in an air tight container and consume within 3-5 days

Grim might be in the name, but there's nothing grim about the taste of these Homemade Bourbon Biscuits!
