Another entry from The Great Hall Feast - this time it's lamb chops and I've got the perfect recipe to excite your tastebuds!
This zesty grilled lamb chops recipe is one of my favourite ways to serve up lamb chops. It's flavourful, light, refreshing and perfectly seasoned to go well with our homemade mint sauce!
Zesty Grilled Lamb Chops Recipe Ingredients:
For the lamb chops
4 lamb chops
2 tbsp olive oil
salt and pepper
1 tsp garlic granules
½ tsp oregano, rosemary and thyme
5 mint leaves
For the mint sauce
½ cup fresh mint
75ml boiling water
2 cloves garlic
1 tbsp caster sugar
3 tbsp white wine vinegar
Zesty Lamb Chops and Homemade Mint Sauce Method:
To begin, make a quick marinade by combining the olive oil, salt, pepper, garlic granules, oregano, rosemary, thyme and roughly ripped mint leaves. Stir together and then dip the lamb chops into the oil getting a nice, generous coating. Place into a dish, cover with clingfilm and allow to chill overnight or for at least 4 hours.
For the mint sauce, roughly tear the leaves into a jug and then add in the boiling water. Leave to infuse for 5 minutes before transferring into a food processor along with the crushed garlic, lemon juice, caster sugar and white wine vinegar. Place the lid on top and blend until smooth.
To cook the lamb chops, remove from the fridge and allow to come to room temperature. Whether you're cooking on a grill, barbecue or frying pan it should take around the same time. You want to cook the chops for one minute on each side followed by another 2 minutes each side for medium, or 4 minutes for well done.
Serve hot with a generous helping of the mint sauce
